Oregon Fireweed Honey
Fireweed is a tall-growing mountain wildflower. The vibrant pink-purple flowers are a brilliant contrast to the greens and browns of the Cascade Mountain conifers. Fireweed is an early seral plant, meaning it grows where there has been recent soil disturbance. Most commonly, fireweed grows after a recent wildfire, hence its name. You might think it would make a hardy heavy honey, but surprisingly not so.
Known as the champagne of honeys, fireweed honey is light in color, and it’s flavor is delicate and sweet with just a touch of spice.

I love honey… and have tried many varieties. I have to say that the flavor of this honey is delicious. it is sweet and light and tastes amazing on cereal or on its own. Don’t settle for classic wildflower honey or Clover honey when you can have the fireweed. It truly is delicious.
