Mix buckwheat honey with a little lemon for a home brewed cough syrup or try your hand at a traditional mead. I sampled some a few years ago at the market and knew I’d want more. This dark honey is very reminiscent of molasses, but I would say it has more of an earthy/oat-like flavor from the buckwheat versus a bit more tang or sharp flavor from molasses. As I was warned by the vendor, this is not a honey for one seeking that average daily sweetener use. I like a little honey out of craving, I may test subbing out molasses in my next batch of cookies, and I’d love to someday see how a batch of mead might turn out with these flavor notes, but I just like it in particular teas or a small rich, sweet spoonful.
