Wonderful warm season honey. It’s a close second to Meadowfoam for me. It does solidify with colder temperatures. Nothing a little dip in warm water won’t resolve.

We bought a 23lb pail of this honey after considering between the Wildflower and Blackberry types. We’ve had the Wildflower in the past and it depends on the year but sometimes it’s light and sometimes darker. I prefer light honey and after talking to someone in the office who said this honey would be lighter (this year at least) than Wildflower, we went for it. It’s delicious! You can taste the hive in this honey– a warm hint of what beeswax smells like, plus floral flavors, which I really like. Our other favorite is the Fireweed, but that one is pretty expensive for every day use. This one is perfect for every day and baking if you like a light, fragrant, slightly floral type of honey. It’s going to be great in macaroons.
