Sometimes we think honey is like art; the bees never make the same thing twice and this year’s honey crop is no exception. Coriander honey is amber in color and among the most complex honey flavors. The honey has an herbal, fruity, and spice flavor. You can taste the cardamom and ginger, also with a hint of lemon, black licorice, and chocolate. As if coriander wasn’t a complex enough flavor, now the bees have added in the flavor of Oregon wildflower honey, and the rich earthy and root flavor of wild carrot. This is truly one of a kind and we think would make a great traditional mead or possible a bochet once caramelized. Let your imagination be your guides, as it obviously was for the bees!
